We started Craftastic Fermentery at 95 Shesh Nagar because we really like the science of how things change over time in a jar. It isn't a huge operation or anything. Mostly, it is just a few of us watching bubbles and checking temperatures every day. My cousin actually got me into it years ago with a jar of something sour on his kitchen counter. Now we have this space where we keep all our vats and bottles. It gets pretty loud sometimes when the equipment is running. Shesh Nagar is a busy spot, but we like it here. People often ask what that smell is, and we just tell them it is the yeast doing its job. We don't have a fancy front office with leather chairs. If you come by, you'll probably see us in aprons with a lot of crates stacked up near the door. The floor is usually a bit damp from washing things down. It is hard work, mostly lifting heavy stuff and waiting for weeks for a batch to finish, but it feels good to make something from scratch. We spend a lot of time just cleaning bottles and checking labels. Sometimes a batch doesn't go right and we have to start over, which is frustrating but that is just how fermentation goes. We are just trying to keep things moving and make sure the jars stay at the right heat for as long as it takes.
