The dust from the road sometimes blows in, so we are always dusting the chairs and the counter. It’s a busy spot and we have to be quick. We spend our mornings prepping all the vegetables and getting the spices ready. The pans are heavy and they get blackened from the heat, but that’s how you know they’re being used well. We don't have a big menu. We just do a few things that we know how to make properly. Sometimes the power goes out and we have to light a few candles until the generator kicks in. It makes for a strange atmosphere, but people keep eating anyway. We get a mix of office workers during the day and families in the evening. The kids usually make a mess with the sauces, so we keep plenty of napkins around. My brother and I run the place together. We disagree on things sometimes, like where to put the fridge or what time to open, but we get through it. It’s just a standard food joint on a busy road. We try to keep the prices fair so people can come back a few times a week without thinking about it too much. We aren't doing anything fancy here, just basic food for people who are hungry and in a hurry.
