The Kitchen

It gets busy around here in Khan Market, especially in the middle lane where we are at number 75. We spend a lot of time just getting things ready before people start showing up. The Kitchen isn't a huge place but it keeps us on our feet all day long. Sometimes the delivery guys are blocking the lane and we have to help move things around. It is just the way it works in this part of town. We’ve been at this spot for a while now and the walls have seen a lot of stuff come and go. Most days it’s about making sure everything is where it should be. We don't really do much fancy talk here. If someone walks in, we just handle what they need and keep going. It’s a lot of manual work that people don't see from the outside. The stove gets hot and the floors need a lot of cleaning by the end of the night. We stay late most evenings just to make sure things are squared away for the next morning. It’s quiet in the lane when we finally lock up. You can hear the fans humming until the last switch is flipped. There is always something to fix or a shelf that needs straightening. We don’t think about it much, we just show up and do the work at 75 Khan Market Middle Lane. It is just what we do every day.
