We operate right here in New Delhi. It is not some big fancy office building with a lobby. It’s a kitchen. That means it’s usually hot, loud, and smells like whatever we are cooking that day. There is always someone chopping vegetables or washing pots in the back. We started this because we liked being around food, not because we wanted to sit at desks. The space is filled with stainless steel tables and big burners. It’s not pretty to look at, but it’s where the actual work happens. We don't have a marketing department or a spokesperson. It is just the cooks and the people who help deliver everything. On some days, the orders come in all at once and the whole place feels like a whirlwind. We lose spoons, we run out of space, and we get tired. But then the next day starts and we do it all over again. Being in New Delhi means we have to deal with the heat and the traffic when we get our supplies. We buy from the local markets when we can. It’s a simple life. We don't try to be anything we aren't. We just run a kitchen and try to make sure the food is done right. That is pretty much the whole story of our daily life here. We just focus on the recipes and hope the stove stays lit.
