Sylvan Chef

Our little spot is located at C 8 in Vasant Kunj, tucked right behind the Spinal Injuries Hospital. It is a bit of a quiet area compared to the main roads in Delhi, which is nice for us. Most of the people who come into Sylvan Chef are either working at the hospital or visiting someone there, so we see a lot of the same faces. We spend most of our time in the kitchen prepping for the lunch rush. It is not a very big place, so it can feel a bit cramped when it gets busy, but we make it work. We have been here for a while now and have gotten used to the rhythm of the neighborhood. The morning starts with getting the supplies delivered and making sure the stove is ready to go. We don't really do much advertising or anything like that. People just find us because they are in the area or they heard about us from a neighbor. It is just a regular kitchen where we cook food that people want to eat during their break. Sometimes we run out of certain things by the end of the day, but that is just part of running a small food business. We aren't trying to be fancy or anything. We just keep the place clean and keep the food coming out as fast as we can. It’s a simple life working here in Vasant Kunj, just cooking and serving every day.
