Punjab Food Court

Punjab Food Court is situated at Bhikaji Cama Place, specifically at UG 70. This is a big commercial hub, so we see a lot of office workers during the week. They all come out for lunch around the same time, and it gets pretty frantic for a couple of hours. We have a counter where people place their orders and then wait around. It’s not a sit-down restaurant with white tablecloths. It’s a food court setup, so things move fast. We are constantly prepping vegetables and getting the tandoor ready. The heat in the kitchen area is quite intense, especially during the summer months. We don't really have a mission statement or anything like that. We just want to serve the food and make sure the containers are closed tight for those who take it back to their desks. Sometimes we run out of the daily specials by 2:00 PM. That’s just the way it is when you have a big crowd. On weekends, it’s much quieter and we spend that time cleaning the vents and checking our supplies. We aren't trying to be the most famous place in Delhi. We just stay at our spot in Bhikaji Cama Place and keep the burners lit. Most of our customers are people we see every Monday through Friday. It’s a steady routine for us and we just keep going day after day, year after year.
