Nagaland Food Stall

Running the Nagaland Food Stall inside Dilli Haat at Aurobindo Marg 19 is a busy way to live. This place is always crowded, especially on the weekends when the market gets full of people walking around looking for something to eat. We are right there in the middle of it. Our kitchen isn't very big, so things can get a bit tight when we have all the burners going at once. We cook the kind of food we grew up with back home. It smells like smoked meats and a lot of chilies in here most of the time. Sometimes the smoke from the kitchen makes our eyes water, but you get used to it. We spend a lot of our mornings chopping vegetables and getting the sauces ready before the first customers show up around noon. It’s hard work on your feet all day, but it’s nice seeing people try Naga food for the first time. Dilli Haat is a good spot for us because there are always different people coming through. We have a few regular tables and some stools. It’s nothing fancy, just a wooden stall with some steam coming out of the pots. Sometimes we run out of stuff early if it’s a holiday. We just try to keep things moving and make sure the food tastes like it should. It’s just us doing our thing every day, keeping the fire going.
