Working over here at Diplomatic Enclave, specifically at Sadar Patel Marg 2, feels different than other parts of the city. It’s a bit quieter outside, but inside our kitchen, it’s the same old story. We spend a lot of time chopping onions, grinding spices, and making sure the pans are hot. It’s a lot of manual labor that people don't really see. We aren't trying to be the most famous place around; we just want the food to taste like it’s supposed to. Every morning starts with checking the supplies that came in. If the tomatoes aren't good, the whole day feels a bit off. We have a small team, and we’ve all been working together for a while, so we know each other's habits. It gets quite loud during the lunch hour when the orders start piling up on the rail. We just focus on one plate at a time. The floors get a bit greasy by the end of the shift, and we’re usually pretty tired, but that’s just how it goes in this line of work. We don't use fancy words to describe what we do. We just cook. The kitchen is our whole world for ten hours a day. It’s hot, it’s fast, and it’s just what we know how to do.
