Our place is at Hanuman Road Lajpat Nagar-II E 104. It’s a bit of a walk from the main metro station, but people find us. Kabul Delhi is where we bring a bit of the flavors we grew up with. The kitchen is always full of the smell of grilled meat and long-grain rice. We don’t have a lot of space, so the tables are pretty close together. You can usually hear what the people next to you are talking about. We use these big plates because that is how the food is supposed to be served. It’s not fancy plated dining with tiny portions. We have a few guys in the back who have been cooking these specific recipes for a long time. They don't use timers; they just know when it’s done. Lajpat Nagar-II is a very busy area, so there is always a lot of shouting and horns outside, but we try to keep it relaxed inside. Sometimes we have to explain the menu to people who haven't tried this kind of food before, which is fine by us. We aren't trying to be the most popular spot in Delhi. We just want to serve the food correctly and keep the place running. It’s a lot of cleaning up grease and washing heavy pots at the end of the night, but we are used to it by now. We just do the work and start over tomorrow.
