Hyderbadi Cuisine

Our place, Hyderbadi Cuisine, is located at I N A on Aurobindo Marg. If you know the INA market, you know it’s always a bit of a scramble with all the shoppers and the traffic outside. Inside our kitchen, it’s much the same. We focus on the kind of food you’d expect from Hyderabad, which means lots of spices and big pots of rice. We spend a lot of time prepping the meat and getting the spice blends just right. It's a lot of heavy lifting with the big handis. The smell of saffron and fried onions is always hanging in the air. We open up and the lunch rush hits pretty hard because there are so many offices nearby. People are always in a hurry, so we try to plate things up as fast as the steam allows. It’s hot work, standing over the big burners all day. The seating area is simple, just enough for people to sit down and eat their meal before heading back to work or shopping. We don't have fancy decorations, just the basic stuff you need for a functional kitchen and a dining room. Some days are better than others, depending on how the market is doing. We just keep the stoves lit and keep making the food the way we learned. It's a busy life here in the middle of the city, but we like the pace and the people who come by.
