Bukhara has been sitting here at Sardar Patel Marg in the Diplomatic Enclave for a very long time. It is a place that feels old in a good way, with the stone walls and the heavy wooden tables. Sometimes it gets a bit overwhelming when the dining room is completely full and everyone is asking for their food at once. We just keep our heads down and keep moving. The uniforms are a bit heavy, but they match the look of the place. We don't really change things much because the way we do it has worked for years. It’s a bit of a tradition for the people who live around here. We see the same faces every week, and they always sit in the same spots. It’s a steady kind of work, and we’ve gotten used to the heat and the noise of the kitchen.
