Shahi Biryani

We are tucked away behind the Daya Hospital compound on Jail Road in Nashik. If you find the big water tank, you’re pretty much there. It’s a quiet enough spot compared to the main road, but we still get plenty of folks coming by, especially those visiting the hospital or living nearby in the housing colonies. We’ve been cooking biryani here for a good amount of time. It started out small and hasn't changed all that much over the years. We like to keep the kitchen simple and focus on the basics. The morning starts with getting the spices ready and making sure the meat is fresh. It’s a lot of heavy lifting with the big degs, but it's what we do. Some days are faster than others, but we usually have a steady stream of people around dinner time. We don't have a lot of staff, just a few of us making sure everything is handled right. The place isn't hard to find if you know the landmark, and we’ve become a bit of a regular stop for the local families. It’s not a corporate chain or anything like that, just a local business trying to make a decent living. We appreciate the people who have been coming to us for years and always have time for a quick chat while the orders are being packed up. It's just how we run things here on Jail Road.
