Nandinee Woodlands Restaurant is right there by the Nasiklub on the Nashik-Pune Road. It’s a busy spot near the Nasardi Bridge in the Dwarka area. Being in the 422011 zip code means we see a lot of people who are just passing through Nashik on their way to somewhere else. I start my shift by checking the parking area to make sure there’s enough room for the cars and bikes. The road outside is always loud with trucks and buses going toward Pune at all hours. Inside, it’s a bit cooler than the street, but the kitchen stays pretty warm all day. We have these big windows, but they mostly show the dust from the road and the traffic passing by. I spend a lot of my time making sure the waiters are actually at their stations and not hiding in the back room. We use a lot of local produce that comes in early every morning from the markets near the bridge. The bridge nearby makes it easy for people to find us, which is good for business. Sometimes we get large groups who are traveling together in a bus, and they take up half the room in one go. It gets a bit overwhelming when that happens, but we just take one order at a time. The floor is made of old tile, so it’s easy to wash down at the end of the night. When the sun goes down, the lights on the bridge come on and it looks alright from the front door. We just keep our heads down and do the daily work.
