Amber Fusion

We are set up over at the Three Leaves Hotel on KRS Main Road in the Hebbal Industrial Area of Mysore. Being near the JK Tyres factory and the convention hall means we see a lot of people who are here for work or big events. The area is quite busy with trucks and workers during the day, so lunch is usually our busiest time. We spend the morning chopping vegetables and getting the spices ready for the fusion dishes we put together. It is not a quiet neighborhood, but we are used to the sounds of the industry around us. The building is easy to find if you know where the Kusuma Chandrashekar hall is. We have a mix of staff, some who have been cooking for a long time and some younger folks learning the ropes. The dining room is simple, and we try to keep it cool because the Mysore sun can be quite strong through the windows. We aren't a fancy place with white tablecloths, just a spot where the food is ready when you're hungry. We spend a lot of time making sure the kitchen stays clean and the orders go out on time. It is hard work, especially when a big group comes in all at once, but we just get through it one plate at a time.
