We are down here at Simla House on Napean Sea Road. It is a bit of a funny spot because we are in Garage Number 56-E on the ground floor. Most people just walk right past if they aren't looking for us. We have been working out of this small space for a while now. It gets pretty cramped when we have a lot of orders to get through, but we make it work somehow. Dealing with food in a garage space means we have to be really organized with our storage. The morning starts early before the sun is even fully up. We spend most of the day just prepping ingredients and packing things up. Sometimes the neighbors from the apartments upstairs come down to chat, which is nice. It is a quiet little corner of the city compared to the main roads. We don't have a big fancy storefront or anything like that. It is just a plain door and a lot of cooking happening inside. We handle everything ourselves, from cleaning the floors to checking the supplies. The space might be small, but it serves us well for what we do every day. People around here know where to find us if they need something. We just keep our heads down and get the work done. It is not always easy but it is what we do. The Napean Sea Road traffic can be a mess sometimes, especially in the evenings, but inside here it is mostly just us working away.
