We are located at 271/273 in Marine Lines. It’s an old building, and we’ve been here a long time. The walls have that old-fashioned look that you don't see much anymore. We spend our mornings making the sweets. There’s a lot of milk boiling and sugar being stirred in big vats in the back room. It gets very steamy and humid in there. Our hands are always a bit sticky from the syrup by noon. We arrange the trays in the glass counters every single day. Some of the recipes we use have been around since long before I started working here. We don't change things much at all. People come in for the same things their parents used to buy when they were kids. The floor is stone and stays relatively cool even when it’s boiling hot outside. We have a few benches for people to sit on while they wait for their parcels to be tied up. Marine Lines is always busy with people heading to the station, so we see a lot of commuters rushing in and out. We just wrap the boxes in that thin paper and tie them with a bit of string. It’s a simple process. We don't have fancy lights or loud music playing. It’s quiet and smells like cardamom and ghee. We just keep doing things the way they’ve always been done. It works for us and the people who come here.
