Raghuvanshi Khaman & Farsan

Raghuvanshi Khaman & Farsan is in Kandivali West, inside the Government Industrial Estate in Charkop. This is not a pretty neighborhood with trees or parks. It’s an industrial estate with workshops and factories all around us. We are right in the thick of it. The address has a long number, 0.0833333333333333, but we just call it the Charkop unit to keep things simple. We start very early in the morning when it’s still dark outside. The workers from the other units come to us for their breakfast before they start their shifts. We make a lot of khaman every single day. It’s all about getting the steam right. The air in our shop is always a bit humid because of the big pots. Kandivali West is a busy area, but this industrial part has its own specific vibe. It’s all about getting things done. We don’t have fancy seating for people. Just a few benches where they can sit for a minute. People eat quickly and get back to their machines. We aren't trying to be the next big food chain. We just want to make sure the farsan is crisp and the khaman is soft. Sometimes the supply trucks get stuck in the narrow lanes of the estate and it causes a big headache. We have to go out and help them move. That's just our day.
