If you head down to Mahim, you’ll find us on Jasmine Mill Road. We’re tucked into the G. Ghasitaram Estate, which is a place that always has something going on. It’s a busy area, lots of movement and trucks coming in and out all the time. Punjabi Ghasitaram Halwai Pvt. Ltd. has been operating out of this spot for quite a bit. The estate itself is old, and it has that specific smell of an industrial area mixed with whatever we’re cooking up that day. It gets pretty warm in the kitchens, especially during the summer months when the air feels heavy and the steam is rising. We start very early, way before the sun is up, to get things ready for the day. It’s a lot of physical work, standing on your feet and moving heavy pots around. We don’t really have time for fancy office talk because there’s always something on the stove or a delivery waiting to go out. The floors are usually a bit dusty from the flour, and the walls have seen better days, but that’s just how it is in a working kitchen. Jasmine Mill Road isn't the prettiest place in Mumbai, but it’s where we belong. We’ve got a rhythm here that works for us. Everyone knows their job and we just get on with it. It’s loud, it’s messy, and it’s always busy, but we wouldn’t really know what to do with ourselves if it was quiet.
