Punjabi Ghasita Ram Halwai

Being located in the A to Z Industrial Estate on Ganpatrao Kadam Marg means we are right in the middle of all the action. Punjabi Ghasita Ram Halwai has been a name people recognize for a long time. Inside our unit, it is always warm because of the large vats and ovens we use to make the sweets. There is a lot of steam and the heavy smell of boiling milk and cardamom. We have workers who have been with us for years, experts at shaping the mithai by hand. It’s a busy production kitchen rather than a fancy showroom. We spend our mornings preparing the batches and our afternoons packing them into boxes for delivery across the city. The floors are tiled and we spend a lot of time scrubbing them down every evening. It’s hard work standing over the heat, but there is a rhythm to it that feels right. We don't use a lot of fancy technology; it's mostly about the hands and the timing. Sometimes the estate gets very crowded with trucks and it’s hard to move the van out, but we manage. We just focus on making things the way they’ve always been made. There are no corporate meetings here, just a lot of cooking and making sure the trays are full and ready to go.
