We work out of Flat No 53 on the 7th floor of Avresh on Hayes Road. It’s a quiet building in Cumballa Hill. Most people don’t even know we are up here until they smell the chocolate in the hallway. It started as a hobby in the kitchen and then just kind of took over the whole apartment. Now there are cooling racks and molds everywhere you look. Dealing with the 7th floor can be a bit of a pain when we have heavy deliveries of cocoa and sugar, but we make it work. Only Chocolate isn't a big factory or anything corporate. It’s just us making things in small batches by hand. We spend a lot of time tempering and melting, and sometimes things don't go perfectly. My sister does most of the packaging while I handle the actual cooking part. Cumballa Hill is a nice area to be in, even if we are tucked away upstairs. Sometimes the humidity makes the chocolate act up, so we have to keep the air conditioning running all day long. It’s not a fancy retail shop where you can just walk in and browse the shelves. Usually, people call us ahead of time or order through friends. We try to keep things simple and focus on the taste. It’s a lot of manual work, whisking and stirring for hours at a time. We like being based here in Avresh. It feels more personal than a storefront and lets us focus on what we're making.
