If you’re walking around Vile Parle West, you’ve probably passed by Morbi Sweet & Farsan Mart. We’ve been sitting on this street for a long time. The shop is filled with glass cases where we keep all the snacks and sweets. It’s a lot of work keeping those glasses clean of fingerprints because kids are always pointing at things they want. We start very early in the morning, around 5 AM, to get the farsan fried and the sweets set. The smell of ghee and sugar is pretty strong, even out on the sidewalk. We don't have a big dining area, it's mostly over-the-counter service. People come in for a quick kilo of something and then head out. During festivals, it gets absolutely packed and we barely have room to breathe, let alone talk. We have a few guys who have been working here for years, and they know the regulars’ orders before they even speak. Sometimes the scales need recalibrating or we run out of carry bags, but we manage. It’s a bit of an old-school way of doing things. We don’t use any fancy machines; it’s mostly just hands and big vats. Vile Parle is a great neighborhood for a business like ours because people here really appreciate their traditional snacks. We just try to keep the bins full and the quality steady every single day. It is just honest work in a busy market area.
