Modern Punjabi Paneer

Modern Punjabi Paneer is located in Andheri, at H-20 and 21. We deal with milk and paneer all day long, so it’s always a bit wet and cold in the shop. The morning starts really early for us, long before the sun is up, because that’s when the milk trucks arrive. We have to move quickly to get everything processed before it gets too warm. It’s a lot of heavy lifting, carrying large cans and stacks of trays. Our hands are usually cold from the water and ice. Andheri is a crowded place, so getting our deliveries out through the traffic is a daily struggle. We don’t have a flashy storefront, just the place where we make the paneer fresh. Sometimes the machines act up and we have to fix them ourselves on the fly. It’s a simple life but it keeps us busy. We don't go in for big advertisements, mostly people just know we are here. The smell of fresh dairy is something you never quite lose. We take pride in the fact that we don't use a bunch of chemicals. It’s just us and a few helpers making sure the crates are full. By the time most people are starting their day, we’ve already been working for hours. It’s tiring but it’s what we know. We just focus on getting the product right and making sure the shop stays clean. We are just normal people doing our daily work.
