Our day starts very early, usually before the sun is even up, because that is when we start making the fresh batches for the morning. You can smell the sugar and the frying from way down the block. We don’t have a fancy dining area; it’s more of a place where you pick up what you want and head home. The counters are always full of different trays of sweets. We have the usual stuff people like for festivals or just a daily treat after dinner. It gets really crowded during the holidays, and we all have to work extra hours then. The floor can get a bit sticky by the end of the shift, but we clean it up every night before we leave. We aren't a big chain, just a local sweet shop that people trust. My father started this business, and we just kept the tradition going without changing too much. We use the same old recipes because that’s what our customers ask for. We don't put much money into marketing; the food we make speaks for itself. It’s a busy, hot kitchen, but seeing the regulars come back every week makes it worth the effort.
