Kol Rolls

Shop number 12 in the Narayan Building is where we spend most of our time. We are right by the Colaba post office, so there are always people walking past our door. This little space is mostly taken up by the big metal grills and the counter where we prep the rolls. Being a busy spot, it gets very warm inside once the burners are going. After several years here, the walls have seen a lot of smoke and grease. A long menu with lots of options isn't something we do. Instead, we focus on a few things that we know how to cook well. The stools are a bit old and the floor is worn down from all the foot traffic. Our customers range from office workers in suits to students looking for a cheap lunch. Sometimes the popular fillings run out by late afternoon if the day has been particularly hectic. My brother handles the money at the front while I stay in the back near the heat. It’s a loud place with the sound of the fans and the traffic outside, but we’re used to it. No pre-made stuff is used here; everything is chopped and cooked right there in front of everyone. It’s a basic way to run a shop, but it’s how we’ve always done it.
