Jay Gopal Khaman Patrawala is our spot in Kandivali West. We are over in Sai Nagar, right on M G Road No 1 at the Tulas building. It’s a place that gets busy very early because of the snacks we prepare. The smell of mustard seeds and curry leaves is always around. We spend our mornings steaming the khaman and getting the patra sliced up just right. The kitchen area is small and gets quite hot when all the steamers are going at once. We’re usually wearing our aprons and moving fast to get things ready for the morning crowd. M G Road is a major path for people in Kandivali, so we see the same faces every day. The Tulas building is easy to find, which is good for us. We don't have a lot of room for sitting down, so most of our work is done while standing up. The counters are stainless steel and they get a lot of use throughout the day. We have to be careful with the knives when we’re prepping the snacks. It’s a simple operation, really. We just make the food, put it out, and clean up afterwards. Sometimes we run out of things earlier than expected, and we have to start a new batch quickly.
