About Indulge Chocolate – Food & Beverages in Mumbai
Tucked away in Bandra West at Patil Marg E-3, our little shop is usually quiet in the mornings. That’s when we do most of the work for Indulge Chocolate, melting and tempering the cocoa. It’s a temperature-sensitive job, so we keep the air conditioning running pretty high. The space is small, which helps keep the smell of chocolate inside. We have a few marble slabs where we work the batches until they are smooth. It’s a messy business sometimes; you end up with brown spots on your apron and even on your forehead without realizing it. We wrap things in foil and paper by hand. It’s slower that way, but we’ve always done it like that. People come in looking for gifts or just a little piece for themselves after lunch. Bandra is a fast-paced neighborhood, but inside here, things feel a bit slower. We don’t have a massive selection, just what we managed to make that day or the day before. Sometimes a batch doesn't turn out quite right and we have to start over. That’s frustrating, but it happens to everyone. The display case is simple, just glass and wood. We keep the lighting low so it stays cool. It’s just a plain shop on a quiet street where we spend our hours working. There’s not much more to it than that. We just like the work and the people who stop by to say hello.
