Our kitchen is right there at Colaba Dahanukar Colony 66. It has been our base for quite a few years. We do catering for all sorts of local things, mostly just people needing decent food for a gathering. It is not a quiet place to work. There is always the sound of knives on cutting boards or the hiss of a big burner. We start early because the prep work takes much longer than the actual cooking. We are not doing anything fancy or experimental here. It is just the kind of food we know how to make and that people seem to like. The space in Colaba is a bit tight, so we have to be really organized with our pots and pans or everything becomes a disaster. We don't have a marketing department or anyone to write fancy ads for us. We just focus on getting the salt right and making sure the rice isn't mushy. Sometimes we run out of something and have to send someone to the market in a hurry. That is just how it is. It is a lot of standing around in the heat and then rushing to get the boxes into the van. We just want to get the food to the tables while it is still good. Most of the time, we are just tired at the end of the day, but that is the business we chose. It is simple, honest work for the neighborhood.
