Dixita Snacks is right by the old Century Mill on A G Khan Road. We are quite close to the Godrej Building, which is a big landmark around here. Being in this part of town means there is always a crowd. We spend most of our time in the kitchen area, making sure everything is ready for the day. The smell of frying and spices is always in the air. It’s a small operation, but we stay on our feet from early morning until the sun goes down. The road outside is constantly busy with trucks and cars going past the mill. We have a few people helping out with the cooking and the packing. It’s not a fancy restaurant, just a place where we make snacks that people like. We don't have much space for people to sit, so it's mostly about getting things out the door. Sometimes when the monsoon hits, the roof leaks a little near the back, so we have to move the bags around. We keep the counter clean, but the floor usually has some flour on it by midday. It’s a lot of work keeping up with the demand, especially during the lunch hour when the office workers from the nearby buildings come over. We just keep our heads down and keep the stoves going as long as we need to. It is busy and loud but we like the pace.
