Our unit is over in Wadala at the Basetty area, specifically units 1/96 and 97. It’s more of a dedicated workspace than a walk-in shop, so it’s usually full of cardboard boxes and some basic machinery for tempering and molding the chocolate. We moved into this space because we needed more room for the cooling racks and the packing tables. It’s not the most glamorous building in the world, and the walls could probably use a fresh coat of paint one of these days, but it works perfectly for what we need to do. We spend most of our time experimenting with different cocoa blends and trying to get the textures of the ganache just right. Since we are a small company, everyone ends up doing a bit of everything, from pouring the liquid chocolate into the plastic molds to sticking the labels on the finished bars. We don't have a marketing department or anything like that, we just focus on making the batches and getting them sent out to the local shops that sell our products. Sometimes a machine breaks down or a fuse blows, and we have to spend the whole afternoon fixing it ourselves with a toolkit. It's a bit of a messy job, and there's usually chocolate smudges on our aprons by noon. We use local ingredients when we can find good quality ones. It’s just a small team of us trying to make something decent. We keep the production schedule on a messy whiteboard.
