About Chocolats Delicieux – Food & Beverages in Mumbai
We operate out of the Casablanca building on 13th Road, right near SV Road in Chembur. It’s on the 4th floor, in unit 401, so it’s a bit quieter than being right on the street. We spend most of our time dealing with melting chocolate and making sure the temperature in the room stays just right. If it gets too warm, everything gets ruined, so we’re always checking the cooling units. It’s a lot of detail work, pouring molds and wrapping things by hand. The kitchen area is small and we have to be careful not to bump into each other. We don’t have a big storefront where people walk in off the street; it’s more about the work we do inside this space. The hallways of the building are usually pretty still, but we can hear the traffic from SV Road if we open the window. Sometimes the elevator in the building is slow, so we end up carrying boxes down the stairs. It’s just a few of us here, mostly focusing on the recipes and making sure the orders are packed correctly. We keep the counters very clean because of the nature of the work. It’s a simple routine of tempering, setting, and boxing up. We’ve been in this Chembur location for a while now and we just keep the focus on the daily production. Most days, the air inside just smells like heavy cocoa and sugar.
