Chandu Halwai is situated at 185 Malabar Hill. It’s a well-known area, but our shop feels quite grounded. We’ve been making sweets here for a long time. The process hasn't changed much over the decades. We still use the same kinds of ingredients and methods. The kitchen is the heart of the place. You’ll see big containers of milk and sugar being moved around. There’s a lot of heat from the stoves. We take pride in the fact that we do things by hand. It takes a lot of patience to get the textures right. The shop floor is usually busy. We have glass cases showing what we’ve made for the day. Once something is gone, it’s gone until we make more. We don't use any high-tech gadgets. It’s all about the skill of the people working in the back. Some of them have been with us for twenty years. They know the recipes by heart. We get all kinds of customers. Some are neighbors who have been coming here since they were kids. Others are just passing through Malabar Hill. We don't put on any airs. Even though the neighborhood is fancy, we keep our shop simple and honest. We just focus on the sweets. It’s a long day from opening to closing, but it’s what we do. We’re just a part of the local scenery here. We hope people keep coming back for more as the years go by.
