We have been operating out of Agrawal Cottage on Wadia Marg for quite some time now. Ashwin Bhai started this little dhokla business because he enjoyed the process of making them and the people around Ghatkopar East seemed to really take a liking to it. It is not a very large or fancy place at all. Most of our mornings are spent just getting the large steamers going and finely chopping up the fresh coriander for the garnish. The kitchen gets very hot, especially during the middle of the summer months, but that is just the way things are in this line of work. We do not maintain a huge, complicated menu. We mostly just stick to the basic snacks that we know how to prepare well. People usually stop by on their way home from work or sometimes they just come in to sit and chat for a little bit while they eat. It is a relatively quiet street most of the time. We do not spend any money on advertising or fancy signs. If the dhokla is good, people naturally come back. If it is not up to mark, they usually tell us right then and there. We try our best to keep everything clean and straightforward. Sometimes the batter takes a lot longer to ferment properly when it is raining outside. You just have to deal with those little things as they come up. It is just the few of us here every single day, making sure the trays are kept full and the spicy chutney is ready for the customers.
