The stove starts going very early in the morning at Shreenand Residency. You can smell the sugar and the frying long before the sun is actually up over Nandanvan Society 1. We have been making sweets here in Ghatkopar West for a long time, and the kitchen is always a bit of a mess with flour and ghee everywhere. It is a lot of work to keep up with the trays that need filling. We have these big metal bowls that have been around since we first opened the doors. People come in mostly for their regular snacks, and we know most of them by their first names. It is funny how some people always want the exact same piece from the corner of the tray every single time. The floor gets a little sticky by the afternoon, no matter how many times we try to mop it down. We do not have a lot of fancy decorations on the walls, just a few calendars and a clock that is always five minutes fast. Working with food means our hands are always busy, so we do not get much time to sit down until late at night. Sometimes we stay open later than we should just because someone stopped by to talk after their shift finished. It is just a normal local shop doing what we do. We try to keep the glass counters clean, but with so many people coming in and out, it is a constant job.
