Dahisar is where we’ve always been. Ajit Sweets & Farsan isn't a new name around these parts. The shop isn't much to look at from the street, but we keep it clean. Every morning the smell of frying farsan fills up the whole lane. It’s how the neighbors know we’re open. We start early because the dough needs time to sit before it goes into the oil. If you come by at seven, you’ll see the steam coming off the big vats. It’s hot work, especially in the summer. We have a couple of fans going but they mostly just move the warm air around. The counter is usually piled high with bags of snacks. We try to keep things in order, but when the afternoon rush hits, it gets a bit messy. People come in looking for something to eat with their tea. We know what most of them want before they even ask. Some of our equipment is getting old now. The scales we use sometimes take a second to settle, but they’re accurate enough. We spend a lot of time just packing things into plastic bags and tying them with rubber bands. It’s a simple life. We don’t have fancy uniforms or a big office. It’s just us, the stove, and the customers who have been coming here since they were kids. That’s enough for us in Dahisar. We just do what we know how to do.
