Our shop is number 7 in the Lower Parel area. This tiny corner of the building is just big enough for the counter and the cooking equipment. We’ve been here for years, and most of the people from nearby offices are familiar faces by now. Our focus is on snacks that people can grab quickly during their short breaks. Since there's no room for chairs, most customers just stand around on the pavement or take their food back with them. Lunch hour always brings a bit of a rush, making it quite loud with everyone talking over the sound of the frying pans. A fancy menu isn't something we bother with; we just stick to the things we know how to make well. My cousin and I run the whole thing ourselves, from buying ingredients at the market to doing the dishes at night. It involves a lot of standing and manual work, and our clothes usually smell like oil by the end of the day. We don’t have a website or any of that corporate stuff. We just rely on people walking past and smelling what’s cooking. Sometimes the popular items run out early, and we have to tell people to come back tomorrow. It’s a simple business in a busy part of the city.
