Our spot is at SCF 9 in the Nine Star Tower, located in Sarabha Nagar. This part of Ludhiana is much more commercial than the industrial zones. There are always people walking around and shops everywhere. We handle Mongolian foods here, which is something a bit different for the local crowd. The space we have isn't massive, but it’s enough for our kitchen and a small area to manage things. We spend most of our hours prepping vegetables and getting the sauces ready. It’s a lot of chopping and stirring. The tower can get quite busy, especially in the evenings when everyone comes out to eat and shop. We don't have any formal training in business management; we just figured things out as we went along. Our staff is a mix of local guys who just want to work hard. We don't wear uniforms, just regular clothes and aprons. Sometimes we make mistakes or an order gets mixed up when it’s really crowded. We just apologize and fix it. We don't have a big philosophy or a grand plan. We are just glad to have a spot in Sarabha Nagar. Every day we focus on tasks like washing the dishes and keeping the counters clean. It’s a straightforward food business without any of the corporate talk you hear from big chains.
