Our restaurant, Debaballhava, is located at Plot No-M-32 in Samant Vihar. We are quite close to Nalco Chhak, which most people in Bhubaneshwar know well. It’s a quiet enough area compared to the city center, but we still get a good number of people coming through our door. We mostly serve the folks who live around Samant Vihar or work in the nearby offices. The restaurant isn't very large. We have a few tables and a kitchen that stays pretty busy throughout the day. We cook the kind of food we like to eat at home. There’s no big secret to what we do. We just buy the ingredients and get to work every morning. The staff is mostly local guys who know the neighborhood well. We don't have any uniform or corporate training sessions. We just talk to people like they are our neighbors, because usually, they are. Sometimes we change things on the menu depending on what is available at the market that day. We don't use a lot of fancy equipment in the back. Everything is done in a very traditional way. It can get a bit hot in the kitchen, and that heat sometimes moves into the dining area, but we have some fans to help. It’s a humble spot for a meal. We don't have any big goals other than keeping the place running and serving food.
