Dalema Restaurant

Dalema Restaurant is over in the Harihara Complex at Unit IV, right on Sachivalaya Marg. We are directly opposite the Rotary Bhawan, so it is a very easy spot to find. This area is full of government offices and busy streets, which means our lunch hours are always very rushed. People come in wearing their office IDs and they want to eat quickly so they can get back to work. We have a lot of tables packed into the space to accommodate everyone. The complex is an older building, and we have done our best to keep our section clean and tidy. The kitchen starts working very early to get the different curries and rice dishes ready. We don't use any fancy presentation, just stainless steel plates and bowls that are easy to wash and reuse. The noise level gets pretty high when the place is full, with the clinking of spoons and everyone talking at once. My job involves a lot of managing the staff and making sure we don't run out of ingredients mid-day. The weather in Bhubaneshwar can be quite punishing, so we make sure the fans are always on full speed. We are not trying to be a five-star place. We are just a local restaurant providing meals to the people who work in this part of the city. It is a lot of hard work but it is what we do to get by.
