Paneer Udyog

Paneer Udyog is a small operation located at Subhash Nagar D 11. If you come by in the morning, the air usually smells like warm milk and steam. That is when the main work happens. We get the milk delivered in big cans and start the process of turning it into paneer. It is a lot of heavy lifting, moving those containers around and making sure the temperature is right so the milk curdles properly. The floor stays wet most of the day because we are always washing down the tables and the equipment. We use big muslin cloths to hang the cheese and let the water drain out. It isn't a high-tech factory or anything like that. It is just a few of us working with our hands to get the blocks pressed and cut into the right sizes. Once the paneer is ready, we put it in cold water so it stays firm. People from the local shops and some of the neighbors stop by to get what they need for the day. Sometimes the delivery bikes are parked all over the place outside while we load up the crates. By the afternoon, things usually quiet down a bit once the fresh stock is sent out. It is a lot of repetitive work, day in and day out, but people always need fresh paneer for their cooking, so we keep at it.
