At Kaka Dairy, we start our work while most people in Mansarovar are still sleeping in their beds. The milk trucks arrive early at our spot on Swarna Path, and we have to get everything unloaded and into the coolers before the sun comes up. It’s a lot of lifting heavy crates and checking the temperatures to make sure nothing spoils in the heat. Our shop at 10/121 is pretty simple; we have the big refrigerators, a counter for the cash box, and some shelves for ghee and paneer. By seven in the morning, the rush starts with people coming in for their daily milk packets or a bit of curd for lunch. We know most of the regulars by their first names and how many liters they usually take home. The floor usually stays a bit damp from the ice and cleaning, so we have to be careful not to slip when we are moving fast. In the evenings, it gets busy again when people are heading home from work and realize they forgot to buy butter or milk for tea. We stay open until the last crate is empty or it gets too late to keep the lights on. Mansarovar is a large area, but Swarna Path has its own rhythm, and we’ve become a part of that daily cycle. There isn't much to say about the decor because we focus more on keeping the milk cold and the place clean. It is hard work with no holidays.
