If you come looking for us, we are at D-5 on the first floor. Being in Chandpole Anaj Mandi means it’s always busy around here. There are sacks of grain everywhere and people shouting and carts moving through the narrow lanes. Ghee Wala Foods (P) Ltd. is right in the middle of all that chaos. The office itself is nothing special, just some chairs and a heavy desk where we keep the ledgers. You can smell the ghee from the stairs before you even get inside. It’s a rich, heavy smell that sticks to everything. We spend a lot of time talking to traders and checking the quality of what comes in. The mandi has its own rhythm, starting very early and slowing down by the evening. Sometimes the electricity goes out and we just sit by the window to use the natural light. It’s an old way of doing business, face to face mostly. We have some regulars who have been coming to this spot for years. The stairs are steep and a bit worn down from all the boots that have climbed them. We don't have a receptionist or anything like that. If you walk in, you’ll probably just see me or one of the other guys sorting through invoices or checking on the latest batches. It’s a simple setup but it works for what we do. We just keep at it every single day.
