Mathura Paneer Bhandar

We are located right in the Sabzi Mandi area of Johari Bazar. Mathura Paneer Bhandar is the name, and we’ve been here for years. Being in a vegetable market means our day starts much earlier than most. We’re usually here when it’s still dark, getting the fresh milk and starting the process for the paneer. The air is always damp and smells like fresh produce and dairy. It’s a very busy environment, with vendors shouting and carts moving everywhere. Our shop is simple, mostly just large containers, cooling areas, and a counter where we weigh things out. We don’t use any fancy machinery; most of it is done by hand, the way we’ve always done it. By mid-morning, the crowd in Johari Bazar is thick, and we’re usually working fast to keep up. We don’t have a website or anything like that. People know where we are and they know when the fresh batch is ready. Sometimes we run out before the day is even half over, and then we just spend the rest of the time cleaning up for the next morning. It’s a messy job, and our floors are always wet, but it’s what we do. We don't worry about being a big brand. We just focus on the milk and the cheese and making sure the paneer is right for the kitchens around here. Most days it's just one order after another until we are tired and ready to lock up.
