Being at Rakesh Singal’s place, whose father was the late Sh. Gopal Lal Singal, gives the place a bit of history. We are right in the middle of Jaipur’s traffic and noise. Running a restaurant service is mostly about managing the kitchen and making sure the deliveries arrive. We don't have a fancy corporate office. Usually, we are just sitting in the back room checking the bills or talking to the vegetable man. It’s a lot of hard work, and the kitchen gets incredibly hot in the summer months.
