About Jaina Idly Dosa Ghol Centre – Food & Beverages in Jaipur
Jaina Idly Dosa Ghol Centre is tucked away in Everest Colony, over in the Lalkothi area. We aren't on a main road, so most of our customers are people who live in the colony or nearby. The main thing we do is make the batter for idly and dosa. The grinders run for most of the morning and the sound is just part of the background here. We have to be very careful with the fermentation, especially when the weather changes in Jaipur. If it’s too cold, it doesn't rise, and if it’s too hot, it goes sour too fast. It’s a bit of a balancing act every day. We also keep a few other basic things that people might need when they are making breakfast. The shop is small and we keep the floor wet sometimes because we are always washing the lentils and rice. People come by on their scooters in the morning, grab a couple of kilos of ghol, and then head off to work or back home. It’s a simple business but it keeps us very busy. We don't really have time for fancy talk or marketing. We just focus on making sure the batter is the right consistency. If it’s too thin, the dosas won't come out right, and our neighbors will definitely let us know about it. We just keep the machines going and fill the buckets.
