Dj Paneer House is located in the Mansarovar Sabzi Mandi at 30/64/4 on Swarnpath. Being in the vegetable market means we start our day very early, usually while most people are still sleeping. We deal with paneer and dairy products, so freshness is the main thing we worry about. The shop is small and stays cool because of the refrigeration we have running. You can hear the hum of the cooling units all day long. We get our milk delivery in the morning and then the work of making the paneer begins. It’s a wet and messy process, with lots of water and steam involved. We wear boots most of the time because the floor gets slippery. Local residents and restaurant owners come by to pick up what they need for the day’s cooking. We don't do any big advertising; people just know we’re here by the smell of the dairy and the location. Sometimes we run out of stock before the afternoon, and we have to tell people to come back tomorrow. That’s just the way it goes when you’re dealing with fresh stuff. The Sabzi Mandi on Swarnpath is always crowded, so getting to our door at 30/64/4 can be a bit of a challenge with all the carts and trucks, but people find their way. We’ve been part of this market for a good while.
