We set up Amratsary Kuclhe right near the Panchwati Circle in Raja Park. It’s 378 1 if you are looking for the exact number. The tandoor is the main thing here. We get it started early so the coals are glowing by the time the first people show up for lunch. There is always a lot of flour in the air, so our clothes usually end up looking white by the end of the shift. We sit on small stools and roll out the dough. The butter we use comes in big blocks and we go through it pretty fast. It’s a noisy place because we have to slap the dough against the inside of the oven. Sometimes the smoke gets in your eyes if the wind blows the wrong way through the door. Customers stand around on the sidewalk waiting for their turn. We don't have much space inside for sitting, just enough for the prep table and the oven. It gets crowded when the college kids come by in groups. We try to keep up with the orders but the oven only holds so many at once. My cousin helps with the serving and he’s usually joking with the regulars. We don't do any delivery or anything, you just have to come to the circle and find us. It’s just a basic setup with some plates and napkins, nothing more than that. We stay until the dough is finished for the day.
