Parijat Apartments is where we do most of the prep work. It’s 18/8, right on M G Road. Being so close to the High Court means we get a lot of people coming in and out of the area all day long. I started Yash Caterers because I liked cooking for my family and it just grew into a business. We handle a lot of small office lunches and some bigger stuff on the weekends. The kitchen is always hot, especially when we have three or four big pots of dal going at once. My brother helps with the deliveries, usually on his old scooter which struggles a bit with the heavy bags. We don't have a big menu, just the things we know how to make well. The M G Road traffic can be a nightmare in the afternoons, so we have to leave really early to make sure the food doesn't get there cold. Some days are quieter than others, especially when the court is on recess. We mostly just keep to ourselves and focus on the chopping and cleaning. The apartment building is old, and we know all the watchmen by name. They usually get a bit of whatever we have left over at the end of the day. It’s a simple life, just making sure people get fed and the dishes are washed for the next morning. It takes a lot of water to keep the kitchen clean, so we are always hauling buckets.
