Vikas Caterers is over at 73, Rambaugh Main Road, not too far from the R S S Office on M G Road. It’s a handy location because it’s easy for people to pull up and chat with us about their upcoming events without searching too much. I’ve been running this place with a few helpers for several years now. We started small, just doing snacks for tea parties, and then it just kept growing by itself. Now we do full dinners for hundreds of people at a time. The kitchen is usually a mess of activity by ten in the morning on most days. We try to keep things organized, but when you’re dealing with that much food and heat, things get a bit wild. I usually handle the main cooking myself because I’m very picky about how the masalas are mixed. My brother takes care of the transport and setting up the tables at the venues where we go. We don't have a big corporate philosophy or any of those fancy mission statements. We just want the food to be hot and the plates to be full for everyone. Some days the heat in the kitchen is almost too much to handle, but we drink some cold water and keep going. That’s just the life of a caterer in Indore.
