Ropan Caterers is based at 72, Rajswargram, over in the Chattribaug area of Indore. It’s an old part of the city, and our building reflects that. It’s a bit cramped inside with all the cooking equipment and the supplies we have to keep on hand. We spend a lot of time in the kitchen, obviously. It’s a lot of heat and noise, especially when the big burners are going all at once. We aren't trying to be some fancy international brand. We are just local people who know how to cook for a crowd. The floors are usually a bit wet from cleaning, and the walls have that smell of spices that never really goes away. Rajswargram is a decent place to work, though parking the trucks can be a bit of a nightmare sometimes. We don’t have a receptionist or anything; if the phone rings, whoever isn't holding a ladle usually picks it up. It’s a bit chaotic, but it’s our version of normal. We focus on the basic stuff like making sure the rice isn't mushy and the salt is right. We don't use any fancy tech, just the same pots and pans we've had for years. It’s hard work on the legs, standing up all day, but we’re used to it. We just do our bit in Chattribaug and keep moving until the orders are finished and the kitchen is finally quiet.
