Our little spot is Shop No-E-7 over in Scheme No-94. Most people in Mahalaxmi Nagar know where we are. Jmb Uttam Bhog is basically where we spend all our hours. The kitchen is always going. You can usually smell what we’re making before you even see the shop. We do a lot of traditional snacks and sweets. It’s a lot of standing and stirring big pots. My hands are always a bit floury or sticky from the sugar. We don't have a huge seating area. Most people just come in, get their boxes, and head home. The display counter stays pretty busy, especially during the festival times when everyone wants something special. We try to keep everything fresh. If something doesn't look right, we don't put it out. It’s a bit of a scramble sometimes to keep up with the demand when it’s a holiday. The staff is just a few local guys who know the recipes. We talk while we work to pass the time. It’s loud and it’s hot, but we’re used to it. We’ve been in this building for a while now. The floor is a bit worn from all the foot traffic. We don't do much marketing. The food usually speaks for itself when people take it home to their families. We just keep cooking and hope for the best. That is our life here in the kitchen.
